Spaghetti and Meatless Zucchini Balls

PictureRecently, I have been on a meatless kick and I have been experimenting with a bunch of different recipes tweaking and adjusting the ingredients for my dietary needs as I go.

I love the challenge of creating foods with ingredients I may have never tried before, or trying recipes that still can taste good with foods limitations.  Perhaps, it’s because I have dietary restrictions and it makes it all the more fun for me experimenting and coming up with new ways of eating old favorites.

One of these favorites I have been truly salivating for is homemade spaghetti and meatballs, without the meat.

So after experimenting, I found a pretty close comparable substitute to have for “Spaghetti Sundays” or a really tasty appetizer for the holidays or get-togethers with family and friends!

These zucchini balls turned out really good and the green color was very noticeable when paired with my sauce.  However, don’t ask my husband who was not much of a fan, but that’s okay.  At least he tried them and I am sure with a few more tweaks these too, will become a staple for him!

I think he may have liked them better if I had added some cheese in the mixture.  So on a side note, these may be bland for some people which is where adding some other ingredients can really make the flavors pop or just add to it.

However, you decide to make these tasty treats have fun with them.  I will definitely be making these again and I am sure I will adjust the recipe yet again!

Ingredients:

  • 2-3 raw Zucchini
  • 1 clove of garlic
  • 1/2 cup Namaste Foods Quinoa Flour
  • 1/2 cup Flaxseed flour
  • 1-2 Eggs…or if you are sticking with a vegan diet then use another binder
  • 1 teaspoon Salt
  • Fresh herbs: basil, parsley

**Optional: you can also add cheese to these zucchini balls too if you want to add additional flavor.

Directions:

  1. Preheat oven to 350 F degrees.
  2. Wash the zucchini and remove the ends, keep the skin on for extra fiber and color.
  3. In a blender or food processor, finely crush the zucchini, slowly add the eggs, garlic, flour, salt, and herbs and pulse a few times to blend.
  4. It will form a moist batter that comes easily together. If the mixture is too sticky, simply add a bit more flour, 1 tablespoon at a time until you can easily shape balls with your hands.
  5.  I like to form smaller zucchini balls when I make this about the size of golf size balls.
  6. Either use a slightly greased baking sheet or in my case I used a slightly greased mini muffin pan and placed each balls in the mini muffin pan.  I used spray olive oil to grease my pan.
  7. Shape the balls until no more batter left.
  8. Bake for 20 minutes or until the outside is golden and crispy.
  9. Serve immediately or if making Spaghetti sauce add the zucchini balls into the sauce and serve!

Namaste Muffin and Scone Mix

PictureWhen I find foods that are healthy, free from the top allergens, very easy to prepare, and most of all delicious I have to share with my family and friends!!!

Now, I have made my version of gluten-free blueberry muffins and they too are good, but when a company has literally taken the guesswork out for you then I am super stoked and even more thrilled to share. Why? You might ask… Because within gluten-free cooking and especially baking, you really must have the right conversions of regular flour to gluten-free flour making the baking process all the more ‘intricately specific.’

I am beyond grateful to Namaste Foods for their attention to detail, concern, and their company’s mission to help alleviate the burden for those suffering with any food related issue. These products have been truly an amazing find and because of that I am more than happy to be sharing them with you!

Ingredients:
*Box of Namaste muffin and scone mix
*1-1.5 cup of Blueberries

Directions:
1.) Simply follow the directions on the box

Staying Hydrated…..with a Celery, Banana, and Coconut Water Smoothie!!!

PictureIf you are at the beach, taking a hike, or lounging at the pool hydration and staying hydrated is crucial for your health. Did you know that when you’re ‘dying of thirst’ you are already experiencing a form of dehydration?  Staying hydrating can be a daunting task for some people because of the “boring” water they feel compelled to drink.  Although, water is one of your best sources of re-hydrating yourself you can make the water tasteful by adding hydrating fruit and vegetables to your plain water. From adding lemons to strawberries or cucumbers you can really make the water you drink a fun festive flavor that makes drinking your daily intake of water a less cumbersome chore.

If you want to try another hydrating drink that kicks up the flavor to the next level than you’re going to need your blender.  The next drink that I have been making for a few weeks now is my celery, banana and coconut water blend!  That’s right you’re gonna be drinking celery!

This particular version of ingredients has been used in various combinations in smoothies and seems to be one of the most hydrating for your health.  If you do not like to chew your drinks no worries just strain the pulp and drink.  I find throwing out perfectly edible pureed celery hard to do so I generally leave it and enjoy my hydrating drink on the go, after a workout, or when I’m simply sitting down enjoying a good book.

I have only recently started incorporating coconut water and I must say it too, is an acquired taste but when you blend it with other ingredients: strawberries, banana, or even kiwi it alters the taste to something more familiar.

Enjoy!

Ingredients:

  • 1-2 Bananas
  • 3-4 celery stalks
  • 1 8 oz coconut water

Directions:
Blend all the ingredients until smooth
(Optional you can also add fruit and vegetables of your choice in addition to these ingredients.)
